Hello my beautiful readers 😍, It's a pleasure to bring to y'all another one of my most favorite dish, Jollof rice. That dish that you've probably seen the full blown (friendly) arguments on social media. A staple dish of most countries in west Africa, jollof rice has a long history, Well I'm not going to go into the historical part. Today I'm going to be taking about Nigerian jollof rice. This is the most popular Nigerian rice recipe that is why you will always see it in different event and parties in Nigeria. It is rich and flavorful with a slight smokey taste that gives it it's unique name "PARTY JOLLOF RICE". Let's get started 😊.
INGREDIENTS
• 4 cups long grain rice
• 1 kg beef
• Fresh tomatoes
• 2 red onions
• Tatashe (red bell pepper)
• Ata rodo (Scotch bonnet)
• Tomato paste/puree
• vegetable oil
• 2 tablespoon curry powder
• 2 tablespoon dried thyme
• 2 tablespoon nutmeg
• 2 fingers of ginger- pilled and grounded
• 3 cloves of garlic- pilled and grounded
• Bunch of bay leaves
• Meat stock
• Salt
• Seasoning cubes.
PREPARATIONS
Note: Perboil(Precook) the rice, wash and set aside in a sieve.
1. Into a pot, put the beef add water, 1tbsp curry, 1 tbsp thyme, 1 tbsp nutmeg, salt and seasoning cubes.
2. Once your meat is Perboiled and ready, deep fry and set the oil aside.
3. Blend your tomato, tatahe, Ata rodo and onion together and dry out the excess water by boiling in a pot for few minutes. If you already have tomato stew you can skip this step.
4. Place your pot on heat, add your oil that you set aside, some chopped onion and fry a bit also add your grounded ginger and garlic, then add the blender tomato and pepper mix fry for about ten minutes add tomato paste/puree. Cook until the tomato loses its sour taste and the oil begins to rise to the top.
5. Add the meat stock to the pot and leave to boil on high heat for 5-10 minutes then add remaining curry, thyme, nutmeg, salt and seasoning cubes and boil for 5 minutes.
6. Next, add the parboiled rice and mix thoroughly add water but let it be at the same level as the rice on a medium heat to cook for 10 minutes.
7. When the water is almost dried add the bay leaves and leave to simmer for 1 minutes after tho stir your rice thoroughly and allow it to simmer.
8. By now, you would be persiving the aroma of the burning jollof rice but don't worry just turn down the heat a little 'coz if it ain't smokey it ain't party jollof rice.
9. By now your rice should be ready to eat. Serve with your fried meat.
